Pretend Like its the Weekend Now

I’ve had a bit of an obsession with making fruity pastries as of late. The other morning I felt like making pancakes, but not just any pancakes: banana pancakes!

A quick google search provided lots of recipes to follow but one stuck out. I am a big Jamie Oliver fan and as such, I decided to go with his recipe. The odd thing about this recipe is that there are actually no bananas in the batter. When I made them the first time, I didn’t even realize this until I was about to put the batter in the pan. I was actually going to skip on the fried bananas and just have the pancakes with syrup but ended up going the whole way. Boy, was I glad that I did. These were great. It actually has changed the way I will make pancakes for the rest of my life. From now on, whenever I make pancakes, I will always whip my egg whites.
